I realize the name is not all that appealing but for the life of me I can’t think of another one. If you do please let me know! And please do not let the name of this dish scare you because it is simply amazing, comforting, delicious and wonderful. This started as a crab dip recipe but was transformed one day when we had a leftover grilled fish fillet and substituted it for the crab. The crab is good but the white fish fillet is amazing! To be fair we are spoiled when it comes to fresh fish. Our co-worker is an avid fisherman and brings us fresh ling cod regularly.
The supporting characters: Worcestershire sauce, hot sauce, mayonaise, dry mustard, lemon juice, parmesan cheese and garlic. Mix together until creamy.
The leading actors:
Flaked fish (we just pan fry it in a cast iron skillet with salt, pepper and oil until it flakes), grated cheddar (orange and white here) and crumbled blue cheese.
Mix the fish into the sauce, transfer to a casserole dish and top with the cheese blend.
Bake until bubbly and serve with toast points or crackers. Makes a great appetizer or we’ve been known to enjoy it as romantic dinner for two with Champagne when the kids are at their grandparents.
CHEESY BAKED FISH DIP
- 1 pound cooked white fish
- 1 cup grated cheddar cheese
- 1/2 cup crumbled blue cheese
- 3/4 cup mayonnaise
- 1/4 cup grated Parmesan
- 1/4 cup green onions, minced, optional
- 5 to 6 roasted garlic cloves or 2 cloves minced
- 3 tablespoons Worcestershire sauce
- 2 tablespoons fresh lemon or lime juice
- 1 teaspoon hot pepper sauce
- 1/2 teaspoon dry mustard
- Salt and pepper
Preheat oven to 325 degrees F.
Combine all of the ingredients in a casserole and gently stir until thoroughly mixed. Bake for 40 minutes. Serve hot with crackers or toast points.
