I found myself with a lot of extra ground sausage after buying a 3lb log of it at Costco before Thanksgiving for my cornbread stuffing so I used it in our pasta and it became a new favorite recipe.
Start by sautéing an onion in some olive oil until it is becomes translucent. Then add 1lb of ground sausage and brown it.
Chop up a couple of chipolte peppers and throw them into the sausage with a little adobo sauce. Add 1 pint of marinara and mix it all together.
Then pour over your favorite pasta. Originally we used whole wheat spaghetti but the best by far is this gluten free penne. Top with parmesan cheese and buon appetito! My dh likes this as much as his favorite dish at Il Fornaio!
