Costco has a huge bag of organic carrots that is too good to pass up. It’s way more than we can eat in a week so I set aside a few servings and preserve the rest in the freezer for an easy future side dish. I peel them, put them through the Cuisinart slicer and blanch them in boiling water for three minutes. Once the time is up plunge the carrots into ice water for three more minutes. Then drain them and partially fill a gallon freezer bag. Lay the bag flat in the freezer so the carrots will easily separate for portioning out in the future. Alternatively you can freeze them on a baking sheet like you would berries and bag them after they’re frozen. To enjoy just add the frozen carrots to a little butter and marmalade and heat through in a small partially covered pot. It’s a great alternative to store bought frozen veggies but with the same convenience!
