We love to have citrus around. It looks pretty on display in the kitchen, is very useful for cooking and tastes much better than bottled lemon or lime juice. However, after a week the lemons and limes get soft. Going with our waste not want not motto… We make citrus cubes! It’s also a good way to make the most of Meyer lemon season. Those juicy sweet lemon/orange hybrids are priceless in the months to come. We have the Breville citrus juicer for fresh orange juice and it comes in handy here too. When our citrus stock begins to wilt, I juice the lemons or limes with a low pulp filter. Then pour the juice into silicone prep bowls on a 1/4 sheet pan. They hold exactly 1 1/2 ounces, the precise amount needed for a whiskey sour… Coincidence? I think not… Once they are really solid you can easily squeeze the cubes into a ziplock bag for future use. Brilliant!
